Soup sterilizing has to take place before and after filling process. When products are hot filled (> 60°C) into packages, a preheating tank is needed to raise the temperature of water and hold the heated water for the retorting process, efficiently reducing the cycle time, preventing damage to the packaging material and retaining the original taste and nutrients such as vitamin C and PPO (polyphenol oxidase) of foods.
